Portion the chicken and put it to fry evenly in hot oil. Then subsequently add the coarsely chopped onion, chopped tomatoes, peppers and finely chopped eggplant.
Sprinkle with paprika and top up with 1 1/2 cups warm water. Add salt to taste, slightly cover the dish and let it simmer until ready.
Towards the end, add the freshly crushed black pepper and remove from the heat. Serve with freshly diced parsley.
