Ajiaco Criollo is a Cuban national dish that can be made with meat or just vegetables. In this recipe I will show you Ajiaco Criollo with Chicken.
Finely chop 1 onion and the green pepper and put them in olive oil over moderate heat to fry and soften. Cut the chicken into portions and rub it with black pepper and the two crushed cloves of garlic. Put the meat with the onion and also fry them.
Peel and cut the potatoes, carrots and pumpkin into pieces. Pour them over everything else, season with salt and mix.
Pour enough water to cover the products and dissolve the vegetable broth in it. Add the bay leaves and leave everything to simmer for 20 minutes over moderate heat. Add the grated tomatoes, the hot pepper, the corn cut into thick rings and the coriander, which is finely chopped.
Boil for another 20 minutes, without worrying, that some of the potatoes will fall apart - it is typical for this dish to have mashed potatoes, in order to thicken the broth. Top up your water, if needed.
You can serve the cooked dish immediately or prepare a delicious side dish of sliced avocado mixed with capers and strained yogurt.
Another option is to make a salsa verde of finely chopped onion, garlic, parsley, olive oil and vinegar and add a spoonful or two to each serving.
