Ingredients

  • zuchini - 2 medium
  • eggs - 3
  • feta cheese - 3.5 oz (100 g) crumbled
  • chedar cheese - 3.5 oz (100 g) grated
  • oil - 1 tbsp.
  • dill - 1 tbsp. finely chopped
  • basil - 3 leaves
  • salt - to taste
  • black pepper
  • corn flour - 3 tbsp.
  • baking powder - 1 tsp.

How to make

Delicious recipe, especially if you add corn flour to it!

Wash the zuchini, grate them and sprinkle with a pinch of salt. Whisk the eggs in a bowl.

Add the crumbled feta cheese, half of the grated cheddar, oil, dill chopped finely, basil, salt and pepper. Remove the excess juices of the zuchini by squeezing them jently with your hands and add them to the egg mix.

Add three tbs of corn flour and a small tsp of baking powder. Stir until all the ingredients are incorporated into a thick mixture.

Place a sheet of parchment paper into a 9.5 (24 cm) baking tray, pour over the zuchini mix, and bake in a preheated ove to 360°F (180 degrees) for around 25 minutes.

Remove the soufflé from the oven, sprinkle with the remaing cheddar cheese and bake until the cheese turns golden brown.

Take the soufflé out of the oven, cool it slightly, slice it and serve!
