How to make
Sauté the chopped onion in oil or butter. Add the roasted, peeled and sliced peppers. Once the peppers are braised, add the peeled and finely chopped tomatoes.
Let the dish simmer until the liquid has evaporated. Then add the crumbled feta cheese, chopped parsley and previously beaten eggs with a little salt.
Fry, stirring constantly until the eggs harden. Serve warm and sprinkled with a little black pepper.
