Ingredients

  • eggs - 2
  • yoghurt - 1 cup
  • lemons - juice of half a fruit
  • baking soda - 1 tsp
  • oil - 1 cup
  • flour - as needed for a soft dough
  • wheat starch
  • pistachios - amount is optional
  • butter - 1/2 cup (125 g)
  • sugar - 6 cups, for the syrup
  • water - 6 cups, for the syrup

How to make

Mix all the ingredients and start to knead with the flour to obtain a soft dough. Divide the resulting dough into 10 balls, and each one of those into 6 smaller balls, and roll them in wheat starch.

Flatten all the balls and stack one on top of the other, then begin to roll them out with the starch to obtain very thin and fine pastry sheets. Begin to stack the sheets in a greased tray and sprinkle crushed pistachios between them.

Cut the baklava into pieces, pour 1/2 cup (125 g) of butter on top. Allow to sit at room temperature for several hours. Then put it to bake for 30-40 minutes at 300°F (150 °C).

Prepare a sugar syrup from the 6 cups of sugar and 6 cups of water. Simmer the syrup about 20 minutes and pour it over the baklava. With these ingredients you can prepare 2 trays.

It is best not to use vanilla essence, because it ruins the original taste of baklava.
