How to make
Bake eggplant until soft. Let them cool down, peel them and mash them to a purée.
The mashed eggplants which are seasoned with coriander and ginger are fried for 4-5 minutes in hot oil. They add finely chopped garlic, grated tomatoes and chili peppers.
Allow the product to stew on low heat about 10 minutes, stirring often to prevent burning. Remove from the heat, add salt and serve topped with chopped fresh parsley.
