How to make
Cut the avocados in half, take out the pit and cut them into pieces or slice them thinly. Squeeze the lemon and pour half the lemon juice over the avocado.
Chop the parsley finely and mix with the crushed walnuts. Wash the lettuces, allow to drain and tear them. Hard-boil the eggs.
Cut the ham into strips. Mix the avocado pieces with the torn lettuce pieces, parsley and walnuts. Add the chopped ham and season with the sauce.
For the sauce, mix the rest of the lemon juice, honey, walnut oil, vinegar, salt and black pepper to taste.
Serve the salad garnished with sliced hard-boiled eggs, some croutons and cherry tomatoes if desired.
