How to make
Beat the eggs, add the sugar first – beat them, then the oil, mix again, add the honey, cinnamon, ginger. Sift the flour and baking powder together. Add the flour (at least 3 cups (700 g)) gradually in batches.
Roll out the dough onto an oiled surface (2 tbsp oil) with an oiled rolling pin. Cut out whatever shapes you have available (I have some modeling clay ones that I bought for my son; they turned out really nice).
Arrange on a tray covered with paper towels. Bake the cookies in a preheated 360°F (180 °C) oven about 15 minutes. Watch them, though, as each oven is different! Once cooled, you can decorate the cookies with icing made from the egg white, powdered sugar and lemon juice as desired.
