Ingredients

  • arugula - 7 oz (200 g)
  • radicchio - 1 small head
  • onions - 1 small head
  • tomatoes - 7 oz (200 g) cherry
  • parmesan - 1.8 oz (50 g)
  • black pepper
  • vinegar - 3 tablespoons balsamic
  • olive oil - 4 tablespoons
  • garlic - 1 clove

How to make

The vinegar is mixed with the oil. Clove of garlic is peeled and crushed with the blunt side of a knife. The add to the mixture of vinegar and olive oil, and leave to stand for some time.

Arugula is washed and solid stems removed. Cut into medium sized pieces. Radicchio is also washed and cut into quarters. The stem is removed and cut to quarter pieces. Halve the tomatoes.

Peel the onions and cut them into rings. In a dish, arrange arugula, radicchio, tomatoes and onion rings. Garlic is removed from the vinegar and oil.

Topping is well mixed, salted and poured over the salad. Season with pepper. Parmesan can be bent into thin strips and put on top.
