How to make
Grate the tomatoes. Heat a little oil and fry the crushed garlic, add the grated tomatoes and cook them until thickened.
In a separate dish, fry separately the chopped vegetables - zucchini first, then eggplants, peppers, carrots and finally- chopped onion crescents.
Pour fried vegetables in the tomato sauce and add a few cloves of garlic with chopped dill and parsley. Transfer to a deep baking dish (best is to use clay) and put casseroles in to seal in the hot oven. Season the dish with salt and optionally a little pepper.
Serve oriental casserole cooled.
