How to make
Soak the bulgur is hot water for 30 minutes. Strain the liquid, if not absorbed completely, and mix with the mice in a deep bowl.
Add the egg, ground almonds, and shredded, or finely chopped onion.
Season with salt, black pepper, paprika, cumin, cinnamon, and parsley. Mix all the ingredients together, cover with cling film and chill in the fridge for two hours.
Shape the kebabs by making small balls first and then rolling them out between your palms. You should get around 7 kebabs from this recipe.
Grease a small baking tray, or cover with baking paper, and arrange the kebabs. Drizzle with olive oil and bake at 370°F (190°C) for about 15 minutes, or until ready. Each oven is different, so do keep an eye on them.
Serve with fresh cucumber salad, or a sauce of your preference.
