Dissolve the baking soda in the yogurt and add the sugar, then gradually add the flour too. You need to get a thick batter, thicker than what you use for cakes.
Allow to rest for 15 minutes. Dip a tablespoon in oil, scoop the dough with it and drop it in hot oil to fry. Flip them over to fry evenly.
You can dip the finished fritters in cold sugar syrup or serve with sweet or savory garnish.
