How to make
Clean the kidneys from their adrenal fat, ducts and renal pelvis. Soak for 2-3 hours in water that is periodically changed. It is also soaked in milk for 2-3 hours.
Drain, dry in a towel and cut into slices, then fry in very hot oil. Remove and place in warmed bowls.
The rest of the oil is boiled with wine, some fresh butter and a little salt, sugar and pepper.
Chopped onion is stewed in the remaining fresh butter, mix the sauce for roasting or strong broth and water with some starch and added to the boiling fat.
Stir the sauce until it thickens and then, take it away from the fire. Serve in a gravy bowl. The kidney portions are served with a salad and a garnish by choice.
