How to make
The kidneys are steamed and then rinsed with cold water. Cut into strips, sprinkle with pepper and leave them to stand for 1 hour.
Stew the chopped onion in butter. Roll the kidneys in flour and sauté them with a lid on. Once golden, wine is added, then tomato paste dissolved in a glass of water and salt.
Boil on low heat until finished. Serve, sprinkled with parsley.
