Everyone knows how to make mince meatballs but few homemakers love to experiment with different kinds of vegetable meatball recipes. Pea meatballs are particularly delicious and are also a healthier alternative to meat ones. Here's how you can learn to make them if you would like to surprise your loved ones:
Pea Meatballs with Cheese
Ingredients: 1 large can of peas, 4 eggs, 5.5 oz cheese, several bunches of dill, 2 cloves of crushed garlic, 7 tbsp flour, 7 tbsp breadcrumbs, salt and black pepper to taste, oil for frying.
Preparation: Drain the peas and blend them. To them add the garlic, grated cheese, 1 egg, finely chopped dill, breadcrumbs (if the mixture becomes too runny you can add more breadcrumbs) and salt and pepper to taste. Stir well and leave it for 30 min., then form meatballs from the mixture, dip them in flour, eggs, flour once again and braise on both sides in the heated oil.
Pea Meatballs with Cauliflower
Ingredients: 1 large can of peas, 30 oz cauliflower, sliced celery, 1/2 onion head, 3 eggs, 12 tbsp flour, 8 tbsp breadcrumbs, several bunches dill, salt and pepper to taste, oil for frying.
Preparation: Rip the cauliflower into rosettes, dice the onion and celery and put them to boil with the peas in salted water. Once ready, drain them, blend and add 2 eggs, the finely chopped dill, salt and pepper to taste. Stir everything, let it sit for 30 min. and form meatballs from the mixture, roll them in breadcrumbs and the beaten eggs and braise until golden in the oil.
Colorful Pea Meatballs
Ingredients: 1 large can of peas, 1 onion head, 1 carrot, 5 tbsp canned corn, 1 red pepper, 4 eggs, 10 tbsp breadcrumbs, 10 tbsp flour, several bunches dill, salt and pepper to taste, oil for frying.
Preparation: Saute the finely chopped onion, carrot and pepper, drain them and mix with the blended peas. To these add the corn, 1 egg, breadcrumbs, salt and pepper to taste. Stir well, leave the mixture for 30 min. and form meatballs from it, dip them subsequently in flour, whipped eggs and flour again, then braise until fully ready.
