Preparation: Make a dressing from the mayonnaise, mustard, vinegar and finely chopped parsley. Boil the potatoes, dice them and mix them with the beetroot, baked ahead of time, the diced apples and mushrooms. Pour the dressing over everything, season to taste and serve sprinkled with a little parsley.

Potato Salad with Chorizo

Ingredients: 28 oz fresh potatoes, 2 red onion heads, 9 oz chorizo, 7 tbsp vinegar, 7 tbsp olive oil, 1 tbsp mustard, several bunches fresh parsley, several bunches fresh onions, 1 dried chili pepper, salt to taste.

Preparation: Wash the potatoes well, boil them and cut them into slices. Cut the chorizo into slices also and braise them on both sides in the olive oil. Leave everything to cool.

Next, combine both types of chopped onions and parsley with half the vinegar and add them to the potatoes. Add the chorizo also. Briefly heat the remaining vinegar and all of the other spices, then pour this mixture over the prepared potato salad.
