How to make
Peel the boiled potatoes and dice them. Put them in a bowl, pour the vinegar over them, stir and leave to cool completely.
In the meantime, mix together the mayonnaise, freshly squeezed lime juice, garlic, spearmint, black pepper and salt.
Chop the olives and onions and add them to this sauce.
Once the potatoes have cooled, add the sauce to them and stir well.
Throw in the finely chopped parsley and stir again.
If needed, add more salt.
