pie filling

Phyllo pastry pie is a traditional balkan dish that is often offered at our tables. Loved by all, there are many varieties of pie. In this way, the tradition remains alive, but at the same time- it is updated - adding new products, removing or replacing others.

Classic pie is made with homemade phyllo dough, the kind that our grandparents expertly make with a lot of eggs, oil and cheese.

Add yogurt or sparkling water. Nowadays, ordinary people rarely prepare phyllo pastry sheets - it may happen during the holidays but we rely on ready-made pastries for our everyday consumption.

It may not be the same as home made, but it is also a delicious pie and can become quite phenomenal. Although pie with feta cheese is a classic recipe, there are several things that we can add in the stuffing to refresh it and change it up.

One option is to make it with a leafy green vegetable - dock, nettles, or sorrel. You may not have tried it, but it can be pretty good. Add a little cheese to the vegetables, so as not to lower the salt levels and to allow the vegetables to gain some bitterness.

Furthermore, prior to making the pie, fry the dock, nettles and sorrel in a little fat. If you make it with sorrel, it will acquire a slightly sour taste, and in combination with the cheese, it tastes great.

If you use cheese, you will also get extraordinary pie fillings. But since you will be putting a fair amount in, they can be mixed with a little feta cheese.

The cheese should be shredded. Best use a coarser grater. Add some basil and a little oregano - goes well with cheese, and feta cheese.

If you like meat, you can add mince - to some extent, it will become like a lasagna, but still using the traditional phyllo pastry sheets for pie.

You need an onion to fry with the minced meat and a little black pepper for flavor. You can replace the onions with leeks and add some savory as a condiment. Instead of mince, you can also use chicken.

For vegetarians, an excellent idea is to cook the pie with steamed or stir-fried vegetables or vegetarian mince and tofu. You can make an incredibly delicious and sweet pastry with marshmallows and dried fruits, which are best soaked in water beforehand.

The acclaimed pastry with mayonnaise has many variations. Here's an option that you will love that uses different products:

Pie with mayonnaise and ham

Ingredients: 1 package of phyllo pastry sheets, 1 box dining mayonnaise, 5 oz (150 g) ham, 7 oz (200 g) feta cheese, 7 oz (200 g) cheese, 4 eggs, water, oil.

Preparation: If you don’t want to put ham in, you can add sausage to your liking. It's also tasty with hot dog wieners. Cut them into small cubes, crush the feta cheese and shred the cheese - mix them in a bowl. Spread oil in a pan, stack two sheets with oil on top, then sprinkle with stuffing. Stack repeatedly until ready.

Finally, it is important to top with a crust. Do not add oil in between the sheets because you will be using mayonnaise. In a separate bowl, pour mayonnaise, 1 tea cup of water and eggs - beating them until you get a homogeneous mixture.

Then cut the cake into pieces and heat up the oven to 360°F (180 °C) in advance. Just before putting it in the oven, top the pie with the egg and mayonnaise mixture. Bake until browned.
