Caramel is made from the effect of heat on sugar. It is also called hot sugar.

It is obtained by slowly heating the sugar, as a result of which it melts and acquires a brownish color and a delicate aroma.

There are two types of caramel - dry and liquid.

Liquid caramel is made by dissolving sugar in water and then boiling it until it thickens and it aquires a brown color.

For the dry caramel, the sugar is melted without adding water.

To make a caramel glaze, which you can use for both eclairs and a number of sweet temptations, you will need:

2.1 oz (60 g) butter

3.5 oz (100 g) of sugar

4 fl oz (120 ml) of cream

1/2 tsp. of salt

1 1/2 tsp. of vanilla essence

Preparing caramel for eclairs

Put the butter in a pot with a thick bottom and melt it on the stove over medium to high heat.

When melted, add the sugar, cream and salt. Stir until everything is mixed and boil the mixture. When it starts to boil, reduce to low heat and boil it for 5 minutes, while stirring occasionally.

Remove it from the heat, add the vanilla essence and stir the caramel sauce again. Allow it to cool slightly and you can use it.
