Carp are fish that belong to the family of common rudd, crucian carps and common nase. They are freshwater fish, most often raised in dams. Many approach them with undeserved disregard, describing them as fish that live in silt and have a bad smell when being cooked, but even living in the silt of freshwater reservoirs, carp remain one of the tastiest fish when cooked properly.
In some places carp is traditionally prepared for St. Nicholas Day, but carp can still be eaten on any other day of the year. First, the fish is cleaned from its scales and entrails. Then cut it into 4x4 cm pieces.
Put these pieces in a pot and pour ice water over them and plenty of salt. Leave the carp to soak for at least 2 hours. Then each piece is lightly dried and rolled in a mixture of 2 tbsp. of plain flour and 5 tablespoons of corn flour.
Then the carp must be fried in very hot lard. The most delicious carp is fried in lard, not in oil for best results.
Once the carp pieces acquire a golden color, remove them from the fat and sprinkle them with black pepper. Finally, the carp is drizzled with lemon juice and served warm. We will leave you to decide what you want as a garnish.
