Grape pekmez can be made in many ways. Here is one of them.
For pekmez, well-ripened grapes of sweet varieties are suitable.
Wash the grapes and remove any damaged ones.
Put the grapes in a pot with a thick double bottom and crush them slightly.
Boil the grapes, then blend them. Strain the resulting mixture twice through a strainer, then through cheesecloth.
Boil the resulting juice or syrup until it thickens to the consistency of honey. Do not add sugar, water, or anything else. Towards the end of cooking, you can add lightly toasted almonds or walnuts.
Pour the warm grape pekmez into dry and warmed jars, close them tightly with lids and turn them upside down.
Store the pekmez in a dry and cool place out of direct sunlight.
Pekmez is a healthy food that completely replaces sugar. It is used as a natural healthy sweetener for making sweets, you can add it to tea and coffee, just spread it on toast or consume it directly.
