How to make
Halve the plums and remove the pits.
Place the plums for the pekmez in a large pot and add the sugar and lemon juice.
Cook over low heat, stirring regularly, until the sugar has completely dissolved.
Reduce the heat and boil the plum flesh, until a thick and shiny texture is obtained.
Test for to see if it's done by dropping a drop onto a cold plate. If the drop sets, the pekmez is ready.
Pour the hot pekmez into suitable sterilized jars and seal tightly.
The finished plum pekmez is excellent to use as an ingredient for pancake batter or as a jam in combination with a variety of breakfasts.
