The tripe soup is among the favorite soups of many, and there are very few who have not tried it. To make a really tasty tripe soup, you must clean the beef tripe well, otherwise the smell will make the soup unfit for consumption.

Cleaning the beef tripe consists in removing all food residues and obtaining a white color. This is done in two main ways – by boiling and scraping the tripe or by using slaked lime.

Wash the tripe and boil it in boiling water, then scrape it well with a knife. If you use slaked lime, the procedure is slightly different. Coat the inside of the beef tripe well with the slaked lime.

Then mash the tripe well so that the slaked lime can reach every inch of it. Then, with a knife, scrape the tripe well. Wash it with water and you should get a pure white color - that means you did a good job. Only after that you can proceed to its cooking. Never skip a good washing and cleaning of the tripe. This can only be done if you buy it ready-made from the store.
