How to make
Clean the tripe and put it to boil, until it softens in water. Strain and cut it into thin strips.
Heat the oil and fry the chopped onion, the grated carrot, the finely chopped pepper and add the chickpeas.
Then add the flour, as much paprika as you like and mix well.
Add the tripe, cloves, tomato sauce, chopped parsley and top up with 2 cups from the broth of the tripe.
Let everything boil for another 30 minutes. Serve the beef tripe stew with grated cheese and some chopped parsley.
