How to make
Boil the tripe with the soup roots and cut it into strips. Saute the finely chopped onion in preheated oil, add the flour and fry lightly.
Add the tomato paste dissolved in water, and the paprika. Dilute with the broth from the tripe and let it come to a boil. Add the tripe, bay leaf, black pepper and salt to taste.
Simmer for another 10 minutes. Serve the tripe sprinkled with cheese and parsley.
