How to make
Defrost and fry the cooked tripe in butter. Grab the milk and mix it with the flour, egg yolks and salt and beat them until you have a smooth mixture.
Then pour the milk mixture over the fried tripe and at a very low temperature, while stirring constantly, bring it to a boil. Continue to stir for another 1-2 minutes and remove it from the heat.
Prepare the thickener. In another 1 oz (30 g) of fried butter add paprika and when serving the tripe soup add 1-2 tablespoons of the thickener.
Serve the tripe soup with ready-made tripe with garlic in vinegar and cayenne pepper.
