Fresh pasta prepared at home is usually made by mixing 3.5 oz (100 g) of flour with 1 egg - a serving for one person, which depends on who eats how and how much, of course.

If we talk about the male appetite, this amount should be at least double. However, you probably know from experience that what you end up with is a slightly grainier pasta. A trick to avoid this situation is to use very fine flour - confectioner's or 00 flour is fine.

Smooth pasta dough you will also make by adding a little water - 1 1/3 tbsp (20 ml) (that's one shot if you have it). This way, a smoother pasta is obtained when kneading it.

Of course, the question comes up - will this flour be enough for us? The answer is - No! So how much flour do you need for fresh pasta?

Add flour until it stops leaving marks on your hands (and on the counter where you prepare it). This process takes about 5-7 minutes.

Then do the following: The dough is kneaded for about 30-40 minutes before it begins to be processed into pasta.

It is best to leave the prepared pasta for at least 15 minutes in the refrigerator (if possible) somewhere aside.

All that remains is for you to prepare it yourself - I divide it in advance and beat out the excess flour this way. Only then I pour it into the boiling salted water.

The result is more than good!
