Mozzarella is an Italian dairy product, which is of the pasta filata type. Mozzarella originated in southern Italy and has been produced for centuries in central Italy.
Nowadays, this cheese is made all over Italy, as well as in some other countries. Buffalo or cow's milk is most often used for mozzarella production.
More than 100,000 tons of mozzarella are exported annually, making it among the three most valuable Italian cheeses after Grana Padano and Parmigiano Reggiano.
It is not clear exactly what the origin of this fresh cheese is. However, its history is very long. Before the railroads were a thing, mozzarella was produced in small quantities, because it had to be eaten fresh.
It was also consumed only in the places, where it was made. One of the first testimonies about the origin of mozzarella was written by Pliny the Elder, who in his book Natural History mentioned a cheese called Campo Cedicio.
