Buy fresh meat from a special meat shop. Wash it and dry it.
Put it in a bowl and salt it on both sides, but do not overdo it, because you can oversalt it. Usually, salting the meat in advance, has a higher chance to make the meat tough after cooking. So you can salt the almost fully cooked fried meat.
Place the meat in the refrigerator for 2 hours, then grab a cutting board and kitchen knife. Cut the meat into square pieces. Turn on the stove and place a pan on the hob, in which you can pour 4 tbsp. of oil and wait for it to heat up.
Place the salted pieces of meat one after the other. Fry, until they aquire a golden brown color on one side. When the pieces of meat are fried, turn them over to fry.
Remove the meat bites with a slotted spoon. When frying meat, if you want it in a sauce, you can add two tablespoons of tomato puree flavored with squeezed lemon.
Stir and let the meat bites flavor in the tomato puree. Then add a tea cup of water and stir. Leave them to simmer over low heat, until the water is slightly reduced.
In a bowl put a tablespoon of flour and a little water. Stir and add the mixture to the meat. Stir the prepared fried meat and sprinkle it with fresh parsley.
