How to make
Wash the zucchini and cut them into round slices. Peel the onions and chop them finely.
Heat the oil, saute the onions and zucchini, leave the, to cool. Sprinkle with a little salt and black pepper.
In a bowl, beat the eggs, add the yoghurt, crumbled feta cheese, finely chopped parsley and finally the flour with baking powder.
Stir well to make a smooth mixture. Mix with the sauteed onions and zucchini, transfer to a suitable tray smeared with oil.
Bake in a preheated 360°F (180 °C) oven about 30 min. until reddened.
