Roll out each one into an ellipse. Put a piece of feta cheese at one end and wrap into a roll.
On top of each scone, make cuts with a sharp knife.
Leave them to rise and smear with egg yolk beating with a little milk.
Bake at 390°F (200 °C) 35-40 min.
