Ingredients

  • pork breasts - 2 lb (1 kg) boneless, cut into thin, long strips
  • oregano - 1/2 tsp dry
  • savory - 1/2 tsp
  • mustard seeds - 1/2 tsp
  • black pepper - 1 tsp
  • white pepper - 1 tsp
  • cayenne pepper - 1/2 tsp, coarse
  • paprika - 1 tablespoon, smoked
  • ketchup - 3 tablespoons (or thick tomato paste)
  • oil - 3 tablespoons
  • salt
  • for garnish
  • potatoes - 8, fresh, not very large
  • sea salt - 1 tsp, ground
  • savory - 1 tsp
  • thyme - 1 tsp
  • olive oil - 8 tablespoons or oil
  • black pepper
  • cumin - to taste

How to make

The perfect picnic lunch. Roll up your sleeves and make these incredible boneless pork breast spirals on skewers to enjoy outdoors. You'll need 8 pieces aluminum foil as well.

Chop the pork breasts into long, thin strips about 1 1/4″ (3 cm) wide and place in a suitable container for marinating. Grind/crumble the dry spices (oregano, savory, mustard seeds, black and white pepper, cayenne pepper, smoked paprika). The quantities listed for them is just to give you an idea - decide for yourself how much to add, depending on personal preference.

Rub the pork breasts with the spices, salt them and smear with the mixed together oil and ketchup. Leave them to marinate at least 1 hour (overnight is best).

Then tightly wrap each strip of meat around each skewer to obtain a spiral.

Wash the potatoes well without peeling them, put each potato in a piece of foil, make a crosscut on each potato in the middle, sprinkle a little well ground sea salt, black pepper, cumin, crumbled thyme and savory. Pour on a little oil and wrap the potatoes with the foil into packets.

Find a nice spot for your picnic, light the fire and prepare the charcoal.

Bury the potato packets in charcoal nests.

Put the grill grate on top of the evened out charcoal, smear it with a piece of lard and put the skewers to grill. Once ready on one side, flip to the other.

Dig the potatoes out of the charcoal, open the foil packets and serve as a garnish to your skewers. Don't forget your well-chilled beer, plus fresh vegetable salad.
