"If you have not prepared snails on a skewer, do it quickly, because it is a great delicacy"

Ingredients

  • snails - 12 oz (350 g) cleaned and boiled
  • lemon juice - from 1 lemon
  • garlic - 1 clove
  • salt - 1/2 tsp.
  • black pepper - 1/2 tsp.
  • for the breading
  • eggs - 2 pcs.
  • beer - 3 1/3 tbsp (50 ml)
  • hot paprika - 1 tsp.
  • black pepper - 1 tsp.
  • oil - for frying
  • salt - by taste
  • flour - for rolling and breading
  • for garnish
  • lemons - 1 pc.
  • parsley - a few sprigs

How to make

Wash the cleaned and boiled snails and transfer them into a bowl. Pour them with the juice of half a lemon, black pepper, salt and the minced clove of garlic. Leave them like this for 30 minutes minimum.

During this time, make the mixture for the breading: Beat the eggs with the beer in a bowl, add salt, black pepper and paprika and a sufficient amount of salt.

Gradually add the flour, until the mixture has the consistency of a custard. The goal is for the breading to have a distinct savory flavor, so taste it and add more salt or spices, if necessary.

Roll the snails first in flour, then string them on wooden sticks or skewers. Turn on the stove and place the pan with the oil to heat up nicely.

Pour the breading over the finished skewers with a spoon, until it covers everything. Strain lightly and transfer them into the pan with the heated oil. Fry, until they aquire a red color and turn them on both sides.

Serve the skewers warm with slices of lemon and add parsley leaves. I used tall ice cream sundae glasses, by placing half a lemon in the bottom of each and sticking the skewers on it. Perfect beer appetizer! It also goes well with wine and brandy!
