"These light potato pancakes are a tasty and easy-to-make appetizer or main course for that matter."

Ingredients

  • potatoes - 2 large, boiled
  • flour - 2 tbsp
  • eggs - 2
  • onions - 1 bunch green onions or 1 head
  • butter - 2 tablespoons melted
  • dill - 1 tsp, chopped
  • parsley - for sprinkling
  • salt
  • black pepper - to taste

How to make

Mash the boiled potatoes and mix them with the butter, salt and pepper, while still warm. Once cool, mix in the egg, flour, chopped onion and dill.

From this mixture, fry two pancakes in a greased Teflon pan. Turn them over to fry on both sides and smear them with butter as soon as you remove them from the heat. Serve with salt and if desired, garnish.
