How to make
Peel the oranges into strips and scrape the peels. After scraping the peels, roll them up and string them on a thread, like a necklace.
Put them in water to boil, changing the water 3 or 4 times. For 2 lb (1 kg) of peels, use 4 1/5 cups (1 liter) of water and add 2 lb (1 kg) sugar, or a ratio of 1: 1: 1. Boil to obtain a syrup from the water and sugar.
Toward the end of cooking, drop in the peels, removed from the thread. Boil for 10 minutes, then add a little citric acid.
Put the grated material from the peels in a jar with a few spoonfuls of sugar. The result is a very aromatic essence. Store in the refrigerator for an extended period of time.
