How to make
Sift the flour and make a well in it. Pour the yoghurt, milk, eggs, baking powder, baking soda extinguished with the lemon juice in it. Add the salt and sugar, stir until the flour gets absorbed gradually. Knead a soft dough and leave it to rest for about 10-15 min.
Grease the prepared dough lightly with olive oil, then stretch it out into a long wick with your hands. Cut it into 8 pieces, form a ball from each with hands that you've greased with olive oil.
Distribute 1 tbsp melted pork lard along the bottom of an 11 3/4″ (30 cm) diameter tray.
Smear your counter with olive oil and roll out each ball with an oiled rolling pin. Make them the same diameter as the tray.
Place the 1st sheet in the tray. Sprinkle with melted lard and feta cheese, arrange the next sheet on top and repeat this process.
Do this for all of the sheets, until you run out.
Sprinkle the final sheet with melted pork lard on top, then cut it into squares. Optionally, sprinkle with poppy seeds as well.
Bake the soda bread at 360°F (180 °C) until it reddens.
Shortly before taking it out of the oven you can sprinkle it lightly with paprika around its circumference for extra flavor.
