Ingredients

  • eggs - 3 + yolk for spreading
  • yogurt - 1 cup
  • vinegar - 1 tsp
  • soda - 1 tsp bicarbonate
  • flour - 1 2/5 cups (350) to 1 2/3 cups (400 g)
  • salt - to taste
  • sesame - or poppy for sprinkling

How to make

Mix eggs and yogurt with soda dissolved in it, add the vinegar. Add sifted flour with the salt and kneaded soft dough. Divide it into balls with greased hands, shape them.

Arrange them in a greased and floured pan. In the middle of each loaf, put a small pat of butter and cheese, pressing it with your thumb inside. Spread the bread with the beaten egg yolk with a little oil and some water.

Sprinkle as desired with poppy or sesame seeds. You can replace with dried parsley or fennel tops.

Put the quick soda bread to bake till it turns rosy in a preheated 370°F (190 °C) oven.
