Ingredients

  • potatoes - 6
  • onions - 1 head
  • parsley - 1 root
  • carrots - 1
  • vermicelli - 2 handfuls
  • oil - 3 tbsp
  • paprika - 1/2 tsp
  • salt - to taste
  • black pepper - to taste
  • parsley - fresh leaves, for sprinkling

How to make

Put the pot with slightly salted water to boil on the stove.

Clean and chop the onion finely, the carrot and parsley root into slices, the potatoes into cubes, the parsley leaves finely.

Heat the oil in a pan and add the onions, braise until softened. Add the paprika, stir and remove from the stove so it doesn't burn. Leave the pan aside.

To the boiling water add the carrot, parsley root and potatoes, boil until the potatoes are semi-cooked.

Next add the vermicelli and onion roux. Once the potatoes soften completely, add the parsley, black pepper and salt to taste.

Boil the soup another 2-3 min., serve hot. An aromatic and tasty soup from my childhood!
