How to make
Wash the fig leaves very thoroughly. Put them in a pot and pour the water over them.
Put the pot on moderate heat with the lid on.
Once the water comes to a boil, turn the stove down a bit so it's not boiling hard and continue cooking for 20 min.
Once the syrup is ready, take the pot off and leave it to cool at room temperature.
Remove the leaves and strain the juice. Mix it with the sugar and return to the stove. Stir and leave it until the sugar melts.
During the final 2-3 min. of boiling, add the citric acid. Distribute into bottles and close immediately. Invert so they seal from the heat of the syrup.
This way you can store them longer.
