To the ground pork and veal, add clean, washed rice, two egg whites, pepper and salt to taste. The mixture is kneaded well and made into small oblong shaped meatballs. Roll in flour and without lamination, leave to stand for half an hour.
Boil celery in salted water, it must be peeled, washed and cut into eighths. Once the celery boils, add 3 tablespoons of butter and the meatballs are placed one by one. Boil on low heat, so as not to break, until the rice is softened.
Beat three eggs with lemon juice and add the sauce of the dish to them gradually, stirring constantly. The resulting egg sauce is poured on the meatballs on a plate. In the remaining oil, fry the red pepper and pour it over the meatballs.
