Ingredients

  • flour - 2 lb (1 kg)
  • yoghurt - 1 cup
  • salt - 1/2 tsp
  • sugar - 1 tsp
  • yeast - 3 1/3 tbsp (50 g), fresh
  • water - 1 2/3 cups (400 ml)
  • for smearing
  • eggs - 1
  • sesame seeds - 2 tbsp, white and black

How to make

Sift the flour with the salt, make a well, pour the yoghurt in it. Dissolve the yeast in 2/5 cup (100 ml) warm water, along with the sugar. Add it to the rest of the ingredients, pour in the rest of the water and knead a soft dough.

Leave the dough in a warm area for 15 min. to rise. Then you can form it in 1 of 2 ways - the 1st is like a curly pita. Shape the dough roundly, smear it with egg and sprinkle it with sesame seeds.

Or make it like the so-called lavash. Knead the dough in an oval shape. Sprinkle on all sides with sesame, then put it in a pre-greased oven dish and bake in a preheated 360°F (180 °C) oven for 35-40 min.
