How to make
Dissolve the yeast in part of the slightly warmed water, then, along with the remaining water, sugar, salt and flour, knead a smooth dough. Leave it to rise for about 90 min. in a warm area - until doubled in volume.
Flour a counter and knead the dough for at least another 20 min. Divide the prepared dough into 18 balls. Form each into a wick about 15 3/4″ (40 cm) long. Then weave 2 wicks together at a time into a rope. Shape them into circles about 6″ (15 cm), pinch the ends together.
Dissolve the honey in the water (can use molasses or a little ready-made caramel). Dip the bagels in the honey water and roll in sesame seeds that you've baked slightly beforehand.
Arrange the simit bread in a large tray, laid out with baking paper. Bake in a preheated 390°F (200 °C) oven until they gain a nice brown color.
