How to make
Bake the peppers and put them to cool in a plastic bag. Cut the tomatoes into quarters and put them in a pot on the stove, with water covering them.
Let them boil briefly and once their skins start to come off, transfer them to a pot of icy water. Peel them, then grate half the tomatoes, chop the other half finely.
Pour oil into a pan and pour in the tomatoes. Add the chopped garlic, parsley and salt.
Fry on low heat until the water evaporates, while stirring periodically.
Peel and clean the peppers. Transfer the tomatoes to a deep plate, add in the peppers and chopped feta cheese.
