How to make
Chop the leeks and garlic, then saute them in a little olive oil. To them add the chopped peppers and leave everything to simmer for about 10 min.
Then add the tomatoes, that have been chopped and drained of their juice ahead of time.
Stir well and leave on the heat another 15 min. Finally, add the whipped eggs and spices.
Keep the dish on the stove until all of the products are fully cooked. Then serve with chopped parsley.
