How to make
Clean the peppers of the seeds and stems. Bake in the oven or a grill (in a plastic bag to smother), then peel from the skins.
Beat the eggs with a little salt, using a whisk or fork.
Braise the peppers on both sides in a pan with a little oil, add the beaten eggs to them and fry until eggs are ready.
A quick and very tasty dinner.
Notes: During the winter months, busy housewives can use these baked peppers.
