How to make
Wash and grate the tomatoes, chop the peppers finely. Mix them together, put in a pot on the stove, cook until the vegetables soften. Add a little black pepper and salt.
Put the eggs in salted boiling water for 5-6 min. in a separate container to poach them. Pour the mixture of tomatoes and peppers into a large tray, arrange the poached eggs on top.
Braise the paprika in the olive oil for 1-2 min. and pour it over the eggs. Before serving, you can decorate with stalks of chives or fresh parsley.
