How to make
Clean the nettle and then scald it for 30 seconds in boiling water. Drain it.
In a pan, heat the butter and add the scalded nettle. Stir and add salt, a little black pepper and soya sauce. Grate 9 oz (250 g) parmesan (can use another stinky cheese).
Mix for about a minute and remove from the heat. In a pot, boil water and make the poached eggs.
In a plate, make a bed of the nettle, and place 2 poached eggs on top. Serve with a sprig of basil.
