  • mozzarella - 3.5 oz (100 g) hard or yellow cheese
  • fresh spinach - 1.8 oz (50 g)
  • baking powder - 1/2 tsp.
  • salt - 1/4 tsp.

How to make

The yolks and whites are separated. Chop the spinach and grate the mozzarella.

Add the cream cheese to the yolks and beat well. The spinach, mozzarella and baking powder are added to this mixture and it is mixed with a spatula.

Beat the egg whites nicely. They are added gradually to the other mixture and mixed carefully with a spatula. A very fluffy mixture is obtained.

The mixture is poured into a tray covered with baking paper. In this case, I used a silicone cake mold, which I greased with butter.

Bake the spinach omelette in a preheated oven at 360°F (180°C). For the time, you will have to judge according to your oven. Mine is gas and it cooks quite differently. Bake for about 30 minutes. But for some ovens, this time is a lot.
