How to make
Activate the yeast in a little warm milk, while also adding the sugar and a little flour.
Sift about 3 1/3 cups (800 g) flour, pour in the yeast, add 3 1/3 tbsp (50 g) of the melted butter, the salt and remaining warm milk and knead a soft dough.
Add a little of the remaining flour at a time and finish kneading. Leave the covered dough in a warm area.
Divide the risen dough into 2 balls. Roll out each one into a sheet. Smear each sheet with butter and sprinkle with grated cheese. Place the sheets one atop the other and roll them up.
Cut it into pieces, arrange in a baking form and shape a pita. I used a cake form. Smear with butter on top and sprinkle with sesame seeds. Leave the pita to rise again.
Bake in a moderate oven until golden. Smear the ready pita with butter again and keep covered with a clean towel before serving.
