How to make
Wash the liver very thoroughly and remove the membranes. Cut it into medium-sized pieces. Pour them into a bowl and pour on the milk, sugar and lemon juice. Let them soak for 1 hour.
In the meantime, saute the chopped leeks in a deep pan. Once they soften, add the livers to them, drained of the milk. Stir and braise a bit.
Pour in the wine and let the dish simmer on moderate heat until the liver is cooked. Serve with rice.
